There is absolutely no reason why full fat milk is 'healthier' than skimmed milk, that's basically an old wives tale. Now it is more calorific, which means too much can make you overweight which is unhealthy.

Same applies to all natural fats - nothing 'fattening' or unhealthy about them, only risk is that they are calorific.

And yeah, liver can be excellent, as can chicken hearts, which you cover in garlic, salt and pepper and stick on a skewer on the BBQ.

Dab of good olive oil on a hot pan. Then turkey liver with salt, pepper followed by chopped garlic and finally fresh coriander with a dash of red at the end.

With chips.

I eat liver at least twice per week.

This is bollocks.

And, there's nothing wrong with a decent bit of chicken liver fried in garlic or calves/ox liver, soaked in milk and casseroled with bacon, gravy, onions and mash.

I drink mainly coffee now I live in America, I have tea at work.

We have almond milk at home & coffee creamer at work

I don't eat bread or pasta. Have a once a week family outing to Gramaldis Pizza and I think pasta is boring.

In a wide sense it's interesting what research into food and health can throw up, especially in the US where so many organisations and individuals who are or who influence decision makers have vested interests in a wide range of food producers or manufacturers.

The saturated fat myth has been well and truly debunked several times but people are still holding onto these myths because they have been perpetuated for so long. The guy who did the original study cherry picked his data to suit what he was basically being paid to find.

And subsequent studies have called into question Lustig's research. He is a fairly controversial figure. And considering the milk lobby can charge more for high fat milk, he had plenty of backing.

Lower fat milks gained in popularity beginning in the 1960s because of the move against saturated fats, which were believed to lead to weight gain and because saturated fat raised LDL, and LDL was tied to heart disease, according to Robert Lustig, Professor of Pediatrics in the Division of Endocrinology at the University of California, San Francisco and author of Fat Chance: Beating the Odds Against Sugar, Processed Foods, Obesity, and Disease. “These two facts started the skim milk craze,” he said in an email.

Between 1975 and 2014, sales of whole fat milk have decreased by nearly 61%, while sales of 2% milk have increased nearly 106%. Sales of 1% and skim milk have increased by around 170% and 156%, respectively, according to data from the USDA.

But subsequent research has shown that because fat is more satiating, or filling, eating some higher fat foods can lead to lower calorie intake overall. Cow’s milk, including whole milk, also does not cause a significant insulin response, which is what leads to weight gain, according to Lustig. It also turns out that saturated fats in dairy can protect against certain diseases and are not associated with heart disease, as previously thought. “In any case, the entire dairy/saturated fat hypothesis has been completely debunked,” Lustig said.
